This Apple Cranberry Chicken Salad is a vegetarian twist on the classic chicken salad sandwich!
I have a confession to make… Sometimes I think meat looks good. Even though I was born & raised a vegetarian, every time I see a picture of Apple Cranberry Chicken Salad my mouth begins to water & I become jealous of all those who eat meat…
But then I remember, I can make a vegetarian version!
With all of the vegetarian meatless options available you can pretty much make any dish into a meatless meal!
However, it is true that the closer you live to speciality vegan/vegetarian grocery stores the more meatless options are available to you. We are about 2 & 1/2 hours away from our favorite health food store, but we always stock up on meatless goodies whenever we are in the area!
Even if you don’t live near a speciality health food store there are plenty of vegetarian options available at your local grocery store. In Birmingham we buy most of our meatless food at Publix & Costco.
Oh & don’t worry, I won’t share any recipe on Domestically Blissful with ingredients that you can’t easily buy at your grocery store or online! How mean would that be if I did!
Anyways, my cravings were finally satisfied for a vegetarian Apple Cranberry Chicken Salad sandwich on Sunday & boy were my tastebuds grateful!
This Apple Cranberry Chicken Salad is a scrumptious vegetarian twist on your favorite fall sandwich!
- 4-5 Gardein Meatless Chick'n Strips
- 1/4 Cup Diced Apple
- 1 Teaspoon Finally Chopped Onion
- 3 Tablespoons Dried Cranberries
- 3 Tablespoons Walnuts
- 2-3 Tablespoons Mayonnaise - Just enough to hold the sandwich together
- Salt & Pepper to Taste
- First, defrost & chop the meatless chicken. Then mix all of the ingredients in a bowl & sprinkle in salt & pepper to taste.
- Using your favorite bread or lettuce, layer on some spinach & the Apple Cranberry Chicken Salad, & enjoy!
