January can be a dreary month in the south. The most depressing part is that the cold days never seem to mix with the rainy days, making snow near nonexistent in these parts of the country. I have also noticed that these cold winter days have a large impact on the amount of pasta that I intake. So I am going to blame this cold southern weather for any weight I gain over the next few months. Luckily, these Simple Caprese Lasagna Roll Ups are much lighter than most lasagna recipes, making me feel much less guilty & more inclined to fully enjoy this yummy pasta dish.
What I love about these Simple Caprese Lasagna Roll Ups is that because they are not as “heavy” as a normal lasagna they make a perfect side or appetizer to your next Italian meal. My tastebuds & bottomless-pit-of-a-stomach would be completely satisfied with a big bowl of fresh salad, a piece of Caprese Garlic Bread, & one of these Simple Caprese Lasagna Roll Ups!
8 Dry Lasagna Noodles
1 Cup Ricotta Cheese
3/4 Packed Cup Shredded Mozerella Cheese
1 Teaspoon Dried Basil
1 Tad Black Pepper
1 Smidgen Salt
2 Thinly Sliced Roma Tomatoes
Tomato Basil Pasta Sauce
First, preheat your oven to 350° & boil the lasagna according to the the packaging instructions. Then drain & rinse the lasagna with cold water to stop the cooking process & gently dry your noodles with a clean cloth.
While the lasagna noodles are cooking, in a small bowl combine the 1 cup of ricotta cheese, 3/4 packed cup shredded mozzarella cheese, 1 teaspoon dried basil, 1 tad
black pepper, & 1 smidgen salt & set to the side. Also thinly slice 2 Roma tomatoes & cut 8 thin slices of fresh mozzarella cheese.
Lay out all of your dried lasagna noodles & evenly disperse the ricotta mozzarella & tomato slices on each lasagna noodle. Roll up your Simple Caprese Lasagna Roll Ups & place them in a dish that has 1/2-3/4 cup of your favorite tomato basil pasta sauce spread in the bottom.
Cover loosely with foil & bake for 30 minutes. Then remove the foil, add the slices of mozzarella on top, & bake until the cheese has melted – about 2-3 minutes. If you do make this ahead of time & have it stored in your fridge simply bake for an additional 15 minutes before adding the mozzarella or pop it in the microwave (uncovered), before baking, on defrost for 2-3 minutes.
Serve with a drizzle of your favorite tomato basil pasta sauce & a sprinkle of fresh basil.
