This is my absolute favorite Banana Bread recipe. My mom has been baking this bread for years, and I recently discovered that it first belonged to my Aunt Cheryl, and now I would like to share it with you!
This Banana Bread is perfectly moist and great for National Banana Bread Day on February 23 – but don’t wait till then this banana bread is too good to eat only once a year!
This banana bread will make your home smell delicious and will quickly be devoured in minutes after it is out of the oven. I hope you have fun making this recipe, because once you make it, you’ll have everyone shouting for more!
This makes 1 loaf of banana bread.
What you’ll need
½ cup sugar
¼ cup butter at room temperature (½ a stick)
1 egg
2 tbs sour cream (heaping tbs)
2 large over ripened bananas (frozen works too)
½ tsp vanilla
½ cup all purpose flour
½ cup self rising flour (This makes the bread rise better – but if you don’t have this 1 cup of all purpose flour will work as well and will taste just the same)
¼ tsp baking soda
¼ tsp salt
½ tsp baking powder
First, spray the bread pan with oil and if you are using frozen bananas go ahead and defrost them in the microwave. Then mash the bananas on a plate, removing any bad spots, and set them to the side.
Mix all of the dry ingredients except the sugar in a bowl (½ cup all purpose flour, ½ cup self rising flour, ¼ tsp baking soda, ¼ tsp salt, and ½ tsp baking soda) and set to the side.
Then, in a separate bowl blend the ½ cup of sugar and the ¼ cup of butter into a nice cream in a large bowl.
In the same bowl, mix all of the wet ingredients (1 egg, 2 heaping tbs sour cream, 2 mashed bananas, and ½ tsp vanilla).
Then place the dry ingredients into the bowl of wet ingredients and blend well.
Next, pour your banana bread mixture into the bread pan and let it sit for 20 minutes on the counter. Also, preheat your oven to 350 degrees. This is the perfect time to browse some of my other favorite recipes!
After patiently waiting 20 minutes, place your banana bread in the preheated oven and bake for 25 minutes. Once golden brown cover with foil and bake for another 15 minutes – or until the toothpick comes out clean.
We love to eat ours warm with melted butter on top – it seriously melts in your mouth – but I know many others who enjoy putting peanut butter on top of theirs. Either way, your home should smell scrumptious and your taste buds should be happily entertained by your hot and fresh out of the oven homemade banana bread!
