Now that we are officially in December it’s time to start planning our holiday parties!
And there are a lot of them!
One of my favorites happens on December 24th, when we always have a big Mexican dinner at my in-laws home.
So I’ve been having a lot of fun coming up with all kinds of tasty savory treats that you and your guests can enjoy together this holiday season.
And this Black Bean Enchilada Puff Pastry Wreath couldn’t be more perfect for upcoming holiday parties!

I picked up everything I needed at Walmart and headed home to get started.
As I was experimenting with this tasty savory holiday recipe I realized that it made enough for 2 Black Bean Enchilada Puff Pastry Wreaths.
Which is perfect because we have a big family!
This Black Bean Enchilada Puff Pastry Wreath recipe makes enough for 12 people, but when I make it for our family I’ll definitely need to double the recipe.
Luckily, it’s crazy easy to throw together, even at the last minute!
This puff pastry wreath is filled with 2 cans of RO*TEL® Original Diced Tomatoes and Green Chilies, black beans, corn, cheese, lime juice, enchilada sauce, and seasonings.
RO*TEL is known for delivering bold, adventurous flavor so this Black Bean Enchilada Puff Pastry Wreath recipe didn’t need much to be full of memorable tasty flavor!
Once baked, I topped this savory wreath with chopped cilantro and thinly sliced jalapenos to give the savory pastry wreath a pop of holiday green.
This fun holiday appetizer is sure to be a crowd-pleaser because of both taste and holiday presentation!
And oh my is it delicious!

Black Bean Enchilada Puff Pastry Wreath

This Black Bean Enchilada Puff Pastry Wreath is the perfect savory holiday appetizer recipe for your next holiday party!

Ingredients
- 2 Puff Pastry sheets, thawed
- 2 Cans RO*TEL® Original Diced Tomatoes and Green Chilies, drained
- 1 Can Black Beans, drained & rinsed
- 1/2 Cup Corn, fresh or defrosted
- 1/2 Cup Colby Cheese
- 1/2 Cup Enchilada Sauce
- 1/2 Teaspoon Cumin
- 1/2 Lime
- 1 Egg, beaten
Toppings
- 1/4 Cup Cilantro, chopped
- 1 Jalapeno, thinly sliced
Instructions
- First, preheat your oven to 400 degrees Fahrenheit and line 2 baking sheets with parchment paper.
- In a large bowl combine the RO*TEL® Original Diced Tomatoes and Green Chilies, black beans, corn, cheese, enchilada sauce, cumin, and the juice of half a life. Set to the side.
- Next, roll out both puff pastry sheets and cut them both into a large circle and place them on separate baking sheets.
- Place a small bowl in the center of the dough to create a circle impression, then use a knife to cut 4 lines in the circle (creating 8 triangles). Repeat process on the second puff pastry circle.
- Divide the black bean enchilada mixture between the two puff pastry wreaths.
- Next, form the wreath by bringing the outside edges up and over the wreath center. Then take the 8 triangle dough pieces and bring them up and over the wreath filling and the outside edges, pressing the two edges together. Repeat on the second pastry wreath.
- Brush both puff pastry wreaths with the egg wash and bake the Black Bean Enchilada Puff Pastry Wreaths for 15 minutes or until golden brown.
- Remove the Black Bean Enchilada Puff Pastry Wreaths from the oven and let cool slightly before topping, slicing, and serving. Enjoy!
