Instructions

  1. In a large pan drizzle 1 tablespoon vegetable oil & cook the 1/3 cup diced onion, 1 large garlic clove, 1/2 teaspoon cumin, 1/2 teaspoon paprika, & 1/2 teaspoon black pepper for 3-5 minutes on medium heat, stirring occasionally.
  2. Add the lime juice, 1 cup corn & 1 can black beans & cook for 5 minutes, stirring occasionally.
  3. Fill the tortillas with your black bean & corn mixture, top with cheese, red cabbage, cherry tomatoes, avocado, mango, sour cream, salsa verde, cilantro, & a squeeze of lime.
  4. Place your tacos in a taco rack for extra easy serving & enjoy!
