  1. Heat 2 tablespoons oil in a nonstick fry pan over medium-high heat then add 1/2 onion & 2 minced garlic cloves. Cook for 2 minutes, stirring occasionally.
  2. Stir in 1 cup corn, 1 diced red pepper, 1 diced tomato, green chilies, 1 cup orzo, 2 cups vegetable broth, 1 teaspoon salt, & 1 & 1/2 teaspoon cumin.
  3. Cover & cook for 12 minutes, stirring occasionally.
  4. Next, stir in the black beans, 1 cup enchilada sauce, 3 tablespoons fresh cilantro, lime, 4 ounces cream cheese, 1/2 cup cheddar cheese, & 1/2 cup pepper jack cheese.
  5. Cook uncovered, for 5 minutes, stirring occasionally.
  6. Serve topped with fresh cilantro, sour cream, & lime.
