Cherry Goat Cheese Crostinis is a super simple warm appetizer made with roasted cherries, soft goat cheese, pistachios, & a drizzle of honey.
As you can see, I had as much fun creating these Cherry Goat Cheese Crostinis as I did photographing them!
The biggest challenge I ran into was restraining myself while I took pictures. All I really wanted to do was enjoy a refreshing Diet Coke® Feisty Cherry while savoring these cherry crostinis, but I refrained for a few extra minutes so that I could get just the right shot.
Although I may have refrained too long because I took so many pictures it was hard to narrow them down.
These Cherry Goat Cheese Crostinis are not only easy to make and topped with colorful flavor, but they are one of the most photogenic appetizers! Food can be photogenic, right?
My mom swung by to pick me up for a mother-daughter shopping date just as I was wrapping up this food photoshoot & she had a good laughed as I ate over half of these finger food crostinis, while sipping on my Diet Coke Feisty Cherry, before heading out the door.
And since I picked up an 8 pack of Diet Coke’s new flavor Feisty Cherry the last time I was at Kroger, Roger & I were able to enjoy them all weekend while watching the Olympics.
Although Roger did ask why I didn’t pick up more of the new flavors…
Looks like I’ll be heading back so we can try out more of the bold & unexpected-yet-refreshing new flavors of Diet Coke® at Kroger.
What’s nice is that you can pick up an 8 pack or on-the-go singles (at an affordable price), which is perfect since we want to experience all the NEW flavors, like Diet Coke® Feisty Cherry, Diet Coke® Ginger Lime, Diet Coke® Zesty Blood Orange, & Diet Coke® Twisted Mango. Plus Diet Coke® Classic Diet Coke is also getting a facelift while keeping the same great taste we’ve always loved. I love the look of these sleek cans!

I plan on picking up a bunch of the individual on-the-go singles next time I am at Kroger, although I may need to purchase double of each so that Roger & I can both have our own.
And as we are down to one car, because of that “oh deer” accident last Tuesday, I will have to wait until I can go with Roger. Luckily, I’m planning to go to work with him later this week so I’m hoping to try to sneak away for a few minutes to run some errands.
I’m thinking I may also need to pick up some more fresh cherries while I’m at it. I’m simply obsessed with roasting cherries now!
This may be a new mid-day snack for me. A cherry goat cheese crostini in one hand & a Diet Coke Feisty Cherry in the other. That’s my kind of tasty break from my everyday routine!
Cherry Goat Cheese Crostinis
- Prep Time: 8
- Cook Time: 7
- Total Time: 15
- Yield: 12 1x
- 3 Tablespoons Extra Virgin Olive Oil
- 18 Cherries, pitted & halved
- 1 Teaspoon Fresh Rosemary
- 1 Smidgen Salt
- 1 Smidgen Pepper
- Goat Cheese, softened
- 1/4 Cup Pistachios, shelled
- First, preheat your oven to 400 degrees Farenheit.
- Slice the baguette into 12 slices, place on a baking sheet, & brush with two tablespoons of olive oil. Bake on the lowest rack for 7-9 minutes or until toasted.
- On a second rimmed baking sheet lined with parchment paper place the halved cherries, drizzle with one tablespoon olive oil, & sprinkle with fresh rosemary, salt, & pepper. Roast on the top shelf of your oven for 7-9 minutes or until the cherries are tender & juicy.
- Spread a spoonful of goat cheese onto each baguette slice, top with three cherry halves, a few pistachios, & a drizzle of honey.
- Serve immedietly.
