Instructions

  1. First, wash your cherries, remove the stems, and place them on a baking sheet lined with foil.
  2. Sprinkle 1 tablespoon sugar on top of the cherries and roast them for 15 minutes (stirring every 5 minutes) at 450 degrees Fahrenheit.
  3. Once roasted, set to the side and let cool to room temperature.
  4. While the cherries are roasting, combine the 1 cup whole milk with the 3/4 cup granulated sugar in a large bowl. Whisk continuously until the sugar has dissolved, about 1 minute.
  5. Next, whisk in the 2 cups heavy cream and the 1 teaspoon pure vanilla extract.
  6. Pour the liquid ice cream into the frozen mixer*(1) through the spout at the top.
  7. Let mix for 25-30 minutes.
  8. While the ice cream is mixing, remove the pits from the room temperature cherries and chop them up.
  9. About 5-8 minutes near the end (of the 25-30 minutes), once the ice cream is nearly thickened, pour the chopped cherries and chopped chocolate into the ice cream. *(2)
  10. Let it continue to mix for the final 5-8 minutes.
  11. Your Dark Chocolate Cherry Ice Cream is ready once it has expanded to near the top of the container and looks like it is about to overflow.
  12. Enjoy immediately or freeze for later enjoyment!

Notes

  1. We usually freeze ours for 24 hours before making ice cream. 
  2. I save a few chopped cherries and a little bit of the chopped chocolate to place on top of the ice cream to make it look extra pretty.
