  1. First, preheat your oven to 325 degrees Fahrenheit & spray 2 bread pans with oil. Blend the 3 eggs, 2 cups of sugar, 3 teaspoons vanilla, & 1 cup of sour cream into a large bowl.
  2. Then add the 2 cups of grated zucchini, 3 cups all-purpose flour, 1/2 cup cocoa powder, 2 teaspoons instant coffee, 1 teaspoon salt, 3 teaspoons cinnamon, & 1 & 1/2 teaspoons baking soda & blend until combined (approximately 2-3 minutes). Stir in 1 & 1/2 cups chocolate chips & walnuts if desired. *(3)
  3. Bake your zucchini bread for 1 hour or until a toothpick comes out clean.
  4. Let cool on a cooling rack & enjoy. *(4)
