This Eggo Waffle Cake is quick & easy to make with layers of homemade whipped cream & topped with fresh berries making it perfect for a special brunch or a fun party dessert!
3 Kellogg’s® Eggo Thick & Fluffy Original Waffles
1 & 1/2 Cups Heavy Whipping Cream
3 Tablespoons Sugar
3/4 Teaspoon Pure Vanilla Extract
Fresh Mint, to taste
Powdered Sugar, to taste
First, cook your Kellogg’s® Eggo Thick & Fluffy Original Waffles according to their packaging instructions. Let cool completely.
In a chilled medium bowl combine the 1 & 1/2 cups heavy whipping cream, 3 tablespoons of sugar, & 3/4 teaspoon pure vanilla extract & whisk on the highest speed for 1-2 minutes, or until stiff peaks form.
Assemble your Eggo Waffle Cake with the homemade whipped cream between each layer.
Top with more whipped cream, fresh berries, mint, & powdered sugar.
