Frozen Patriotic Watermelon Pops

Frozen Patriotic Watermelon Pops are filled with whipped coconut cream & a blueberry to create the perfect summer treat for any red, white, & blue occasion.



  1. First, cut out a star in the center of each triangle watermelon slice & insert a popsicle stick through the rind & into the watermelon, using a knife to cut the slit in the watermelon.
  2. Then set the watermelon pops on baking sheet lined with wax paper.
  3. Next, open your can of chilled coconut milk & scoop out the solid section on top & place it in a bowl.
  4. Whip the chilled solid coconut milk with a blender until fluffy, then add vanilla extract (I used about 1/4 teaspoon) & sweeter to taste.
  5. Place a spoonful of whipped coconut cream in each star, spread it out evenly within the star, & add a blueberry to the center. *(2)
  6. Continue this process until all of the watermelon slices are filled & topped.
  7. Place in the freezer for 1-2 hours, or until the watermelon is completely frozen. *(3)
  8. Serve cold & enjoy!
