Last year, Roger and I tried halloumi for the first time while traveling in Ireland. When we first saw it on the menu, we weren’t sure what it was, as it was listed as a vegetarian burger substitute. Once we realized it was cheese, we were hooked! Now that grilling season is in full swing, I decided to try my luck at grilling halloumi to top on a fresh berry salad. Even though halloumi is known to be a cheese with a higher than the normal melting point that you can grill, I was a little nervous. And since summer is a great time to re-establish healthier habits, I decided to make 3 lighter swaps in this summer berry salad. I swapped olive oil for Mazola® Corn Oil when grilling for heart-healthy reasons (see the clinical study mentioned above), halloumi as a vegetarian swap for chicken, and I also swapped a creamy dressing with a lighter homemade lemon berry dressing.
My first attempt at grilling halloumi was a bit of a cheesy mess.
But I quickly learned 2 tricks.
First, make sure both sides of the halloumi are well brushed with Mazola® Corn Oil to prevent sticking. Mazola has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. And don’t forget that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor, but also the nutritional value.
Secondly, leave the halloumi on the grill for a full 3 minutes before trying to flip it. Otherwise, the grill marks will have not appeared, which means there won’t be a crust to hold the hot cheese together & the result will be a melted cheese mess.
This Grilled Halloumi Berry Salad is a really big side dish that can feed eight people. I used one package of halloumi cheese (cut in half), and once grilled, I cut each half into four slices so that each person can have their own piece of grilled halloumi.
Since halloumi has it’s own unique salty flavor, you really don’t need more than one slice each. Luckily, Mazola Corn Oil has a neutral taste that lets the natural flavor of your food stand out.

Grilled Halloumi Berry Salad
This Grilled Halloumi Berry Salad is a topped with blackberries, raspberries, strawberries, grilled halloumi, pecans, goat cheese, & a homemade lemon berry dressing.

- 1 Block Halloumi Cheese
- 1 Tablespoon Mazola Corn Oil
- 8 Ounces Baby Greens
- 1 Pound Strawberries, sliced
- 6 Ounces Blackberries
- 6 Ounces Raspberries
- 1 Cup Pecans
- 1/4 Cup Goat Cheese, crumbled
- Mint Sprigs
Lemon Berry Dressing
- 1/2 Cup Blueberries
- 1/2 Cup Strawberries, sliced
- 1 Lemon, juiced
- 1/4 Teaspoon Salt
- 1/8 Teaspoon Black Pepper
- First, blend 1/2 cup blueberries, 1/2 cup strawberries, lemon juice, salt, & pepper until smooth & set to the side.
- Preheat grill to medium-high heat/flame. Cut the halloumi cheese in half (lengthwise) & brush Mazola® Corn Oil on both sides of each slice.
- Once the grill is hot grill the halloumi for 3 minutes on each side or until grill marks appear. Place the grilled halloumi on a plate & set to the side. Once cooled cut each slice into 4 pieces.
- Place your baby greens in a big bowl & top with strawberries, blackberries, raspberries, pecans, grilled halloumi, goat cheese, & a few sprigs of mint.
- Top with your lemon berry dressing & enjoy!
