Oven Roasted Zucchini



  1. Place the cleaned and sliced zucchini sticks in a single layer on a pan sprayed with oil (I like to put foil down for quicker clean up).
  2. Next, drizzle olive oil and lemon juice across the zucchini.
  3. – The olive oil and lemon will help the seasonings stay on the zucchini sticks –
  4. Finally, sprinkle on your Italian seasoning, thyme, basil, and oregano.
  5. With your oven on broil, place the zucchini sticks on the middle rack and cook for about 5-8 minutes, until lightly browned.
  6. Serve the Oven Roast Zucchini sprinkled with Parmesan – and maybe even an extra splash of lemon!
