First, preheat your oven to 400 degrees Fahrenheit and line a baking sheet with foil.
Next, brush both sides of each sweet potato slice with olive oil.
In a small bowl combine the salt and dried thyme and evenly sprinkle the mixture onto both sides of all of the sweet potato slices.
Bake for 30 minutes, flipping all of the sweet potato slices after 15 minutes.
While the sweet potatoes are baking place your 8 ounces of goat cheese and 1/2 cup heavy cream in a food processor and blend until smooth. Place the whipped goat cheese in a bowl and set it to the side.
Let the sweet potato slices cool slighly then top each one with a dollop of whipped goat cheese, 2-3 pear slices, chopped walnuts, dried cranberries, a sprig or two of fresh thyme, and a drizzle of honey.
