Instructions

  1. First, cook the pasta according to the packaging instructions.
  2. In a large pan heat the 1/4 cup olive oil over medium heat and cook the minced garlic for one minute, or until fragrant.
  3. Stir in the 1/2 cup cherry tomatoes, 1/2 cup diced red pepper, 3/4 cup zucchini, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon dried basil, and 1 teaspoon dried parsley.
  4. Cook the fresh vegetables for 3 minutes, stirring occasionally, then add the 1/2 cup artichoke hearts, 1/2 cup olives, and 1/3 cup sun-dried tomatoes.
  5. Continue cooking for 3-5 minutes until all of the ingredients are hot.
  6. Next, drain the pasta and fold it into the vegetables adding salt and pepper to taste.
  7. Top with feta, basil, and a drizzle of olive oil.
  8. Enjoy!
