Instructions

  1. First, preheat your oven to 425 degrees Fahrenheit & line a large baking sheet with parchment paper.
  2. In a large bowl, combine the 2 cups strawberries, 2 teaspoons lemon juice, & 1 teaspoon pure vanilla extract.
  3. In a small bowl mix the 3 tablespoons cornstarch, 1/4 cup granulated sugar, lemon zest & 1 pinch of salt. Use your fingers to rub the lemon zest into the sugar.
  4. Sprinkle the dry ingredients from the small bowl into the large bowl of berries & gently toss the sugar mixture with the fruit until the fruit is completely covered.
  5. Then mix the 1/2 cup chocolate into the strawberries.
  6. Lay out your defrosted puff pastry & cut off the corners of each sheet to create 2 circles.
  7. Pile the strawberries & chocolate in the center of each puff pastry while leaving 1-2 inches of crust.
  8. Fold the 1-2 inches of crust dough up & over the fruit to create a crust edge that will hold in the strawberries while baking.
  9. In a small bowl, whisk the egg & milk to create an egg wash. Brush the top of each crust edge with the egg wash & sprinkle with 1 tablespoon sugar.
  10. Bake for 10-15 minutes or until the puff pastry is puffed & golden brown.
  11. Once golden & flaky remove from the oven & let cool slightly.
  12. Serve with ice cream & enjoy!

Notes

  1. I like to use vanilla bean sugar for the top of baked goods to make them extra special.
