These Streusel Pumpkin Cheesecake Bars are the perfect fall dessert with a cinnamon graham cracker crust, two layers of cheesecake, and streusel with a drizzle of icing and caramel sauce on top.

I have been craving anything and everything sweet recently.
Honestly, the adoption process has been a roller coaster and I have been emotionally eating everything in sight.
And I know that’s no excuse, but it’s either eat or shop.
So I’ve been eating, with a little bit of Christmas shopping on the side.
But don’t worry, I’ve been working on getting things back under control and refocusing on getting work done.
My goal is to get ahead, like way ahead, in work.
So when God blesses us with our baby girl I will be able to spend all of my time bonding with her while my blog continues to run smoothly in the background.
Honestly, I’ve had the parable of the 10 virgins in my head recently and I know God is encouraging me to get as much done as possible now so that I will be ready in the wait.

And yes, working more does mean cooking and baking more, but I’m trying to be more balanced in the taste testing part of my work.
Oh, but don’t worry, I’m also exercising (I need those natural endorphins) and sharing my baked goods.
One of the nice things about these Streusel Pumpkin Cheesecake Bars is that they are easy to share.
Also, they are like so crazy good!
And I will admit that I did fall back on an old trick of combining tried and true recipes to make one new awesome recipe.
I took my graham cracker base from my Raspberry Nutella S’mores Bars and just swapped regular graham crackers for cinnamon graham crackers + extra cinnamon.
Then I quadrupled the cheesecake part of my Pumpkin Spice Cheesecake Brownies.
And I finished it off with a double recipe of the streusel topping from my Apple Cinnamon Streusel Banana Bread.
Easy peasy!

Streusel Pumpkin Cheesecake Bars
These Streusel Pumpkin Cheesecake Bars are the perfect fall dessert with a cinnamon graham cracker crust, two layers of cheesecake, and streusel with a drizzle of icing and caramel sauce on top.

Ingredients
Graham Cracker Crust
- 1/4 Cup Brown Sugar
- 2 Tablespoons White Sugar
- 1 Tablespoon Ground Cinnamon
- 5 Tablespoons Butter, melted
- 1/2 Teaspoon Vanilla Extract
- 1 & 1/2 Cups Cinnamon Graham Crackers, crushed
Filling
- 4 Packages 8-Ounce Cream Cheese, room temperature
- 1 & 1/2 Cups White Sugar
- 1/2 Teaspoon Salt
- 1 Tablespoon Pure Vanilla Extract
- 4 Large Eggs
- 1/4 Cup All-Purpose Flour
- 2 Cups Pure Pumpkin (not pumpkin filling)
- 2 & 1/2 Tablespoons Ground Cinnamon
- 2 Teaspoons Ground Nutmeg
- 1 Teaspoon Ground Cloves
- 1 Teaspoon Ground Allspice
Streusel
- 2/3 Cup Brown Sugar (Packed)
- 2 Tablespoon White Sugar
- 1 Tablespoon Cinnamon
- 6 Tablespoons Melted Butter
- 2 Cup All-Purpose Flour
Toppings
- 1 & 1/2 Cups Confectioners’ Sugar
- 3 Tablespoons Whole Milk
- 1/2 Teaspoon Vanilla Extract
- Caramel Sauce
Instructions
- First, preheat your oven to 350 degrees Fahrenheit and line a 9X13″ baking dish with parchment paper.
- In a medium bowl, blend the 1/4 cup brown sugar, 2 tablespoons white sugar, 1 tablespoon cinnamon, 5 tablespoons melted butter, and 1/2 teaspoon vanilla extract.
- Then stir in 1 & 1/2 cups crushed graham crackers.
- Pour your graham cracker mixture into the baking dish and pat it down to create the crust.
- In a second bowl blend your 4 packages of 8 ounces cream cheese until light and creamy.
- Add 1 & 1/2 cups sugar, 1/2 teaspoon salt, 1 tablespoon vanilla extract, 4 large eggs, and 1/4 cup flour, blending until smooth.
- Divide the cheesecake mixture between two bowls and in the second bowl blend in 2 cups pumpkin, 2 & 1/2 tablespoons cinnamon, 2 teaspoons nutmeg, 1 teaspoon cloves, and 1 teaspoon allspice.
- Pour the regular cheesecake mixture onto the graham cracker crust, spreading evenly.
- Next, pour the pumpkin cheesecake mixture on top and evenly spread the mixture over the regular cheesecake being careful not to mix the two different cheesecakes.
- Bake for 30 minutes.
- While your cheesecake is baking, use the first bowl to mix 2/3 cup brown sugar, 2 tablespoons white sugar, 1 tablespoon cinnamon, 6 tablespoons melted butter and 2 cups flour to create the streusel. Set to the side.
- Once your cheesecake has baked for 30 minutes, remove it from the oven, and quickly top with streusel.
- Continue baking your Streusel Pumpkin Cheesecake for another 30-35 minutes until the cheesecake is set and the streusel is golden.
- Once your Pumpkin Cheesecake Bars are finished baking remove them from the oven and let cool completely.
- When your cheesecake reaches room temperature place it in your fridge and chill it for 1-2 hours.
- While the cheesecake is chilling mix 1 & 1/2 cups confectioners sugar, 3 tablespoons milk, & 1/2 teaspoon vanilla extract. Set to the side.
- Once chilled you can cut*(1) and top your Streusel Pumpkin Cheesecake Bars with icing and caramel. Enjoy!
Notes
- For easy cutting, be sure to use a warm clean knife for each cut. You can do this by running your knife under warm water, drying it, and making the cut. Repeating this process for each cut.
