  1. In a large pot over medium heat, add 1 tablespoon of olive oil and then sautee the small onion, 1 diced red bell pepper, 1/2 cup chopped carrots, and 1 pinch salt.
  2. After 3 minutes, stir in the 2 minced garlic cloves.
  3. Once the carrots are tender, about 2 more minutes, stir in the 2 tablespoons chili powder, 2 teaspoons ground cumin, 1 teaspoon smoked paprika, diced chilies, and diced tomatoes.
  4. Cook for 2 minutes, then add black beans, red kidney beans, and 1 & 1/2 cups vegetable broth.
  5. Bring the chili to a boil, then reduce the heat and let simmer for 25-30 minutes adding salt and pepper to taste.
  6. Serve with your favorite toppings and enjoy!
