Summertime bliss has hit me hard!
I’m ready to soak in the sun & make as many summer lovin’ memories as humanly possible. Roger is done with school FOREVER & while that means that I have him in my arms 24/7 I have no plans to abandon all of you in the process.
What’s crazy is that all of a sudden I am blogging as much as I was last fall. Around Roger’s spring break, & our trip to Hawaii, things started to get crazy & I lessened my blog posts to compensate & focus on the things at hand. I’m not sure if you’ve noticed the sudden increase, but I’m on schedule to be posting 4-5 times each week (just like last fall) in the coming months, possibly even through Christmas!
I worried that once Roger graduated I would end up playing hooky & just hanging with him all summer long, but instead I’ve got the blogging bug!
The thing is, I have so many posts planned in my little planner & I feel like they are all really important. I don’t want any of them to slip through the cracks, so I am determined to share each one of them on the day, or at least in the week, that I have them planned.
Luckily, Roger is so consumed in getting all of the paperwork in order for his new job, & picking out appliances for our new house, that I have plenty of time to blog.
Although lets be honest, there are never enough hours in the day for blogging, which is why Roger thinks I need to hire someone to help with social media & stuff. The problem is that I am a control freak when it comes to my baby, but this is another subject for another time.
The real reason you are here today is because you wanted to check out my Watermelon Ice post! Truth be told, I created this “recipe” a little while back & forgot to post it! This Watermelon Ice was created from the same watermelon that I used to make my Fresh Watermelon Cupcakes!
But let’s be honest, this isn’t much of a recipe. This Watermelon Ice is more like a fun trick to keep your drink cool & flavor it with a bit of your favorite summer fruit.
Watermelon Ice is a great way to use up leftover watermelon & can be used for a variety of events. They would be adorable for brunch, tea time, a baby shower, wedding, or simply to cool down your drink after a hot day of playing in the sun!
Plus you can customize the shape of your Watermelon Ice to uniquely fit your event, such as stars, hearts, triangles, or any other shape using a small cookie cutter!

Watermelon Ice
Watermelon Ice is a delicious way to add color & flavor to your drinks for parties, bridal & baby showers, or just a hot summer afternoon!
Ingredients
- Watermelon
Instructions
- Slice open your watermelon & use a melon baller to scoop small balls of watermelon onto a baking sheet. *(1)
- Place baking sheet filled with watermelon balls in the freezer for at least one hour or until frozen.
- Enjoy your Watermelon Ice in a tall glass of your favorite summer beverage!
Notes
- *1. You can create any shape you want for your watermelon ice. Cubes, stars, hearts, triangles, ect. using a knife or cookie cutters.

Wont the watermelon just leave back its fibre in the drink?
isnt it better to juice it and strain to get only the liquid and freeze?
You can, but it’s more work. I know a lot of people enjoy chewing their ice & this is a fun fruity way to enjoy it! 🙂
