I love scones and I have been worried that I might overload you with my love for scones by sharing too many recipes. So I have been patiently waiting for Valentines when I thought it might be appropriate to share my love for scones with you again. Especially since these are White Chocolate Strawberry Scones, which are perfect for Valentine’s Day or really any day you want a special treat!
Probably one of my favorite aspects of scones is that they can easily be warmed up the next day and taste just as incredible as when they first came out of the oven. And truth be told I usually have a hard time not eating them once I start. Yes, they are really that good!
Ingredients:
¾ cup white chocolate
1 slightly heaping cup of chopped strawberries
2 & 3/4 cups flour + extra for stickiness
2 teaspoons baking powder
1 pinch salt ¼ cup sugar
1 stick of cold butter (1/2 cup)
½ cup half and half
½ cup French Vanilla Creamer + 1-2 tablespoons extra
First, measure ¾ cup of white chocolate chips and chop a bunch of strawberries until you have a slightly heaping cup of chopped strawberries.
Next, sift all of the dry ingredients into a medium size bowl – 2 & 3/4 cups flour, 2 teaspoons baking powder, 1 pinch of salt, and ¼ cup of sugar. Then use your fingers to crumble the butter into pea-sized balls in the dry ingredients.
Fold in the strawberries and the white chocolate until they are evenly dispersed. Make a well in the center of the dry ingredients and pour ½ cup half and half and ½ cup of French Vanilla Creamer and mix until combined – but don’t over mix clumps are perfectly normal.
Cover the bowl with plastic wrap and place it in the freezer for 30-45 minutes. The reason for doing this is to chill – freeze – the butter so that when it gets into the oven it will make nice pockets of buttery goodness inside your scones.
While the dough is chilling, preheat the oven to 400°.
Once the dough is chilled place the dough on a well-floured surface, cut the dough in half, cover it with flour, and flatten the dough into a circle that is ½-1 inch thick.
Cut the dough into triangular pieces – the best way to do this is with a pizza cutter – and place them on a baking sheet lined with parchment paper.
Pour 1-2 tablespoons of French Vanilla Creamer in a little bowl and brush the tops of each scone with the creamer.
Bake the White Chocolate Strawberry Scones for 20-25 minutes until golden brown.
These White Chocolate Strawberry Scones are scrumptious with a drizzle of icing made from powdered sugar and French vanilla creamer.
*To keep my scones fresh I place them in a container and just place the lid on top without sealing the container. The scones have a tendency to become too moist in an airtight container.
